DURIAN CHEESECAKE MARVELLOUS, A RECIPE DURING DURIAN SEASON
DURIAN CHEESECAKE
Assalamualaikum and Hello. I am drooling right nowwww. Because I've just made my favourite fruit into a cake!
It's so dense. Love how the base crumbles.
Anyway, I can't waste anymore time before my little boy wakes up, so I need to do this post as a welcome back push button for me start blogging again actively.
So today, I wanna share with you guys a new recipe that I have tried. DURIAN CHEESECAKE. yess you read it right. I am pretty sure you guys love durian as much as I do. but durian cheesecake??...hurm.. will it be nice?? For all I know durian is yummy as it is, also yummy when cooked into serawa/bubur durian but with cheese seems a little weird don't you think? so out of curiosity, I actually made an effort to bake one! and it turns out GOOOOOOD, Deliciously creamy and cheesyyy. For this cake, I am using D24 durian. My husband was buying some durian and I told him to get me D24 or XO for me to make the cake. And when he did bought them I was so excited that I straight away went to the bakery shop to buy other ingredients.
Before we begin, let me brief you guys about this cheesecake. this cheesecake consist of two layers. The first bottom layer is what we call as the base; is made primarily from biscuits. For cheesecake, I prefer to use Digestive Biscuits, but really, any kind of biscuits of your preference will be just fine. The second layer is the cheesecake itself. Some can be made chilled or some is baked. FYI, I am doing a baked version for today. So, are you guys ready? Lets start!
DURIAN CHEESECAKE
Ingredients: BASE
1. 140g Biscuits (Digestive/ Marie/Oreo/any biscuits you like)
2. 20g Almond nibs
3. 80g salted butter (I use buttercup. any brand will do)
(for extra crunchiness, you may add 10g of cornflakes)
Recipe: BASE
1. Melt the butter using double boil method or microwave. Let it cool.
2. Blend/crush the biscuits and almonds/cornflakes.
3. Mix the melted butter together with the dry ingredients until all is well distributed.
4. Grease 6'pan. and pour the base. Pat it tightly so the base is not loose.
Ingredients: DURIAN CHEESECAKE
1. 250g cream cheese. (I use tatura. Philadelphia is also nice)
2. 40g castor sugar
3. 130g durian flesh. Beaten. (I use D24)
4. 20g durian flesh
5. 2 eggs size B
6. 50ml fresh milk/evaporated milk
7. 1 spoon full corn flour
Recipe: DURIAN CHEESECAKE
1. Heat oven with a tray of water @ 150c
2. whisk cream cheese and castor sugar
3. add eggs one by one. whisk well.
4. Add 130g durian flesh and milk. whisk.
5. add corn flour. whisk.
6. add 20 g od durian flesh. mix only with spoon lightly. no need whisk.
7. pour them onto the base that was made earlier.
8. placed in the oven about 1/3 deep into the water.
9. baked for 50 minutes.
10. add another 5 more minutes on top grill to get the brown burn effect.
RULES: Let it cool completely. Keep it chilled in the fridge for at least 4-5 hours before cutting.
Cheesecake becomes really nice once it is cooled. The flavour can also be futher enhanced by squeezing a little bit of lemon juice. ENJOY!
